Chocolate Chip Cookies Tips
1. Enjoy fresh baked cookies every night
Don’t bake the whole batch of cookies in one go. Scoop out one or two cookies per person, and save the rest of the dough in the fridge. Eat a fresh-baked cookie every night! (And who doesn’t love the smell of cookies baking in the oven?)
Side note: before storing your cookie dough in the fridge, level out the dough’s surface in your storage container. This makes scooping the cookie dough easier.We recommend preparing and storing your cookie dough in a glass mixing bowl with a lid.
2. Let the cookies cool (the way you like)
Let the cookies cool for 5 minutes for a warm gooey center and crisp outer edge. Or you can let the cookies cool completely for a soft, chewy cookie.
3. How long can I store the cookies?
Store at room temperature for 5 days or in the refrigerator for 7 days.
3. Use a cookie scoop
A cookie scoop serves uniform cookies that bake evenly. If you’re wanting to bake these healthy cookies on the regular, a 1 Tbsp cookie scoop is a welcomed tool.
4. Use room temperature ingredients.
To allow for super easy mixing, let your butter, cream cheese, egg, and egg yolk warm and soften room temperature. This helps prevent the ingredients from clumping, creating a smooth batter.
5. Got leftover chocolate chips?
Save them for a second batch, or use them to whip up chocolate toffee, too.
6. Separate the egg white with ease.
Crack the egg over a bowl, making sure to keep the yolk in one half of the shell. Then, gently transfer the yolk back and forth between each half of the shell, and allow the egg white to fall out into the bowl. Add the yolk to the cookie batter, and store the egg whites in glass tupperware in the fridge to use for candied pecans.
7. Cover your baking sheet.
Make clean up easy and prevent waste by covering your baking sheet with a non-stick baking mat.
8. Want more flavor or texture?

Ingredients
- 1/2 cup – Unsalted Butter softened
- 2 oz – Cream Cheese softened
- 1/2 cup – Brown Sugar Replacement (Swerve)
- 1/2 cup – Granular Sugar Replacement (Lakanto)
- 1 Egg + 1 Egg Yolk
- 1/2 tsp – Vanilla Extract
- 1.5 cup – Almond Flour
- 1/2 tsp – Xanthan Gum
- 1 tsp – Baking Soda
- 1/2 tsp – Salt pink himalayan or sea salt
- 1 cup Sugar-Free Chocolate Chips (Lilly’s)
Instructions
Preheat oven to 350 F.
Cream butter and cream cheese until fluffy (we recommend a hand mixer).
Add Swerve Brown Sugar and Lakanto. Mix. Scrape the sides with a silicone spatula for even mixing.
Add 1 egg, 1 egg yolk, and vanilla extract. Mix.
Add dry ingredients (almond flour, xanthan gum, baking soda, salt). Scrape the sides for even mixing.
Add chocolate chips. Mix.
Optional, but recommended: Chill cookie dough in the fridge for an hour or overnight for soft, gooey cookies.
Using a cookie scoop, place even sized cookie dough balls onto a baking sheet lined with a Silicon Baking Mat or parchment paper.
For a soft gooey cookie, gently squish each scoop into a very thick puck shape. Or, for a more crisp cookie, flatten scoop into a cookie shape.
Bake for 10 minutes or until golden brown around the edges.
Let cookies cool for at least 5 minutes. Keep cookies for 5 days at room temperature or 7+ days in the fridge.
